Il Babbo Set Dinner 

 

Savour Chef Paolo Benedet’s Southern Italian cuisine with il babbo (Italian for “daddy”) at The Cliff, overlooking the South China Sea.

 

Start with antipasti of Roma Tomato, Cucumber Salad, Sourdough and Seared Prawn Salad. Follow with the first course, Spaghettoni with Sea Urchin, Red Chilli and Garlic tossed in Olive Oil, Grated Bottarga and Savoury Breadcrumbs. For the mains, choose either the 12-Hour Braised Beef Short Rib with Butter Mashed Potato in Barolo Reduction Sauce or Baked Halibut with Crunchy Zucchini and Sweet Capsicum Purée. To conclude the meal, enjoy a dessert of Lemon Tart with Lemon Gelato and Limoncello Liqueur.
